Ingredients:
· Alligator meat 300g
· Enoki mushrooms 100g
· Dried bean curd sticks 100g
· Green bamboo shoots 100g
· Erjing Green Pepper 20g
· Onion chunks 30g
Seasonings:
· Crushed millet peppers 5g
· Fresh green peppercorns 3g
· Ginger 5g
· Scallion 10g
· Salt 8g
· Mustard paste 5g
· Haoji Chicken Flavour Seasoning Granules 15g
· Haoji Sichuan Green Pepper Oil 15ml
· Salad oil 30ml
· Fresh stock 500ml
Preparation Method:
1. Heat the salad oil in a pot, add the crushed millet peppers, onion chunks, fresh green peppercorns, ginger, and scallion. Stir-fry until fragrant, then add the fresh stock and simmer for 10 minutes. Remove the solids and season with 5g of salt, 10g of Haoji Chicken Flavour Seasoning Granules, and mustard paste to create the sauce.
2. Slice the alligator meat and mix with 3g of salt and 5g of Haoji Chicken Flavour Seasoning Granules.
3. Bring the sauce to a boil, add the enoki mushrooms, bean curd sticks, and green bamboo shoots. Cook until done, remove, and place in a serving dish as the base. Add the alligator meat slices and cook until done. Serve on top of the vegetables.
4. Heat the Haoji Sichuan Green Pepper Oil l and stir-fry the sliced green peppers until fragrant. Pour over the dish.
