Preparation Method:
1. Wash the clams thoroughly and let them dry. Fry them briefly in medium-hot oil and set aside.
2. Slice the old ginger into long pieces, cut the chili pepper into diagonal slices, and cut the spring onion into sections. Mix the seasonings together to make a sauce and set aside.
3. Heat an appropriate amount of oil in a pan to medium heat. Add the ginger slices, chili pepper, and spring onion sections. Stir-fry until fragrant, then add the clams and continue stir-frying. Pour in the prepared sauce and stir-fry until evenly coated.
