75g Haoji Green Chilli and Pepper Sichuan Sauce, 7g vinegar, 14g Haoji Chicken Flavour Seasoning Granules, 15g cooking wine, 30g Weijixian (premium soy sauce), 15g raw vegetable oil, 20g Haoji Sichuan Green Pepper Oil, 500g water, 430g soybean oil
Preparation Method:
1. Wash the crayfish and fry them in oil at a temperature of about 60% heat until cooked. Finely chop the grilled green peppers and mix with vinegar, Weijixian, 4g chicken essence, and raw vegetable oil. Set aside.
2. Heat oil in a pot and stir-fry minced garlic, minced ginger, and fresh green peppercorns until fragrant. Add the crayfish, cooking wine, water, and other seasonings.
3. Reduce the sauce until the crayfish is flavorful. Add Haoji Sichuan Green Pepper Oil and transfer to a plate. Pour the mixed grilled peppers over the crayfish.
