, 2g cooking wine), 10g ginger, 10g scallion, 3g cooking wine
Preparation Method:
1. Wash the razor clams thoroughly and marinate them with ginger, scallion, and cooking wine to remove the fishy smell.
2. Wash the red chili peppers, halve them, and cut the sweet peas into sections. Blanch the sweet peas and arrange them on a plate for later use.
3. Heat oil in a pan and quickly pass the razor clams through the oil. Remove and set aside. Leave a small amount of oil in the pan and stir-fry the ginger and garlic shreds until fragrant. Add the chili peppers and stir-fry the razor clams briskly. Incorporate the Fermented Bean Sauce for Stir-frying and stir-fry until evenly coated. Add a small amount of water and bean starch to thicken the sauce. Pour bright oil on top and transfer to a serving plate.
