Ingredients:
100g green asparagus
100g white asparagus
1 egg
30g shrimp
20g Iberian ham
Seasonings:
2g basil
3g salt
1g pepper
40g homemade mayonnaise
5ml Haoji Sichuan Green Pepper oil
Preparation Method:
1. Make the mayonnaise: Slowly whisk the egg yolk and corn salad oil until emulsified. Add salt, pepper, and Haoji Sichuan Green Pepper oil to season and set aside.
2. Blanch the green asparagus and white asparagus in boiling water for 30 seconds. Then transfer them to iced water to cool down. Drain and set aside.
3. Place the egg in 63°C hot water and cook for 1 hour.
4. Marinate the fresh shrimp with salt, pepper, and lemon juice. Then cook the shrimp in olive oil until done.
5. Arrange the salad: Place the white asparagus, green asparagus, Iberian ham, and shrimp on a plate. Peel the egg after cooking and place it on the plate. Squeeze some homemade mayonnaise on top and decorate as desired.
